At the ‘2024 Korea Liquor Awards’ hosted by Chosun Biz, ‘Cypress Forest Oxygen Makgeolli 12’ of Cheongsan Noksu Co., Ltd., an agricultural corporation, received the grand prize in the Korean alcohol Takju fresh makgeolli traditional liquor category.

Cypress Forest Oxygen Makgeolli 12 is a premium thick makgeolli made with O2 fermentation technology.

The O2 fermentation technology developed by Professor Emeritus Kim Jin-man of Chonnam National University, who leads Cheongsan Noksu, consists of two types starting with the letter O: Oxygen Control Technology and Osmolarity Genesis Technology, which are applied by scientifically analyzing the traditional knowledge of our ancestors. It is a combination of fermentation techniques.

The ratio of non-glutinous rice to glutinous rice was set at 2 to 1, and the fermentation water was adjusted to the total rice input to maintain an appropriate and refreshing sweet taste without any additives. In addition, the fermented liquid is directly injected, making it smooth to swallow and rich in flavor. It is also a healthy makgeolli containing more than 300 billion Lactobacillus lactic acid bacteria, a patented microorganism derived from kimchi.

As a side dish, it goes well with meat, especially skate samhap with aged kimchi or bossam with geotjeori kimchi. It also goes well with ups and downs and currents.

The Korea Liquor Awards, now in its 11th year, is an event held annually by Chosun Biz since 2014 to discover and promote good alcohol and support the formation of a healthy alcohol culture. At this year’s Liquor Awards, 1,061 brand products were submitted, the largest ever, and 448 brands received the grand prize.
